8 to 12 red potatoes, with the skin on
1 cup Avocado Oil Mayo
2 tablespoons Apple Cider Vinegar
1 teaspoon cane sugar
1 cup shredded carrots
Sea salt and pepper for taste
Bacon bits, optional
Boil a pot of water over a medium-high flame.
In the meantime, clean and cut the potatoes in cubes. Once the water is boiled, add the cubed potatoes and cook for 5 minutes. Make sure they do not cook too soft but cook enough so they are not hard. When ready, strain out the water and let the potatoes cool to room temperature.
Combine mayo, vinegar, sugar, sea salt, and pepper in a bowl. Mix well.
Add the mixture to the potatoes, shredded carrots, and bacon bits and combine until everything is coated.
Put in the fridge until ready to serve.
