Momma Mac's Cooking Corner: Potato Salad Recipe


  • ​8-12 red potatoes (with skin still on)

  • 1 cup mayo (of your choice--We like the Vegan Mayo from Whole Foods)

  • 2 tablespoons white wine vinegar

  • 1 teaspoon cane sugar

  • 1 cup shredded carrots

  • Sea salt and pepper for taste

  • (optional) Bacon bits


  1. Boil a pot of water. Cut the potatoes in cubes, then add to boiled water and cook for 5 minutes. (Make sure they do not cook too soft but cook enough so they are not hard.) Drain and let cool to room temperature.

  2. Combine mayo, vinegar, sugar, sea salt, and pepper in a bowl. Mix well.

  3. Add potatoes, shredded carrots, and optional bacon bits to the mixture. Mix well. Put in the fridge until ready to serve.
