Momma Mac's Cooking Corner: Mozzarella Stuffed Bacon Wrapped Meatloaf



  1. Preheat the oven to 350°F

  2. Mix the ground beef, eggs, breadcrumbs, and spices in a large bowl.

  3. Oil a 9x5 inch loaf pan and line with ⅔ of the bacon, leaving an overhang.

  4. Shape a long log with ⅔ of the meat mixture and fit it inside the bottom of the loaf pan.

  5. Make a groove in the middle and add the mozzarella cheese to it.

  6. Cover with the remaining meat mixture and fold the bacon overhang on the top and cover entirely with the remaining ⅓ of bacon. Spread the top with ⅓ of the ketchup.

  7. Bake in the middle of the preheated oven for 40 minutes.

  8. Spread with another ⅓ of the ketchup and continue baking for another 20 minutes.
