The Sunday Cookbook: Peanut Butter, Oats & Chocolate Energy Bites

  • ½ cup creamy peanut butter

  • ⅓ cup honey

  • 1 tsp vanilla extract

  • 1 cup old-fashioned oats (raw)

  • ⅔ cup finely ground oats

  • ½ cup ground flaxseed

  • 6 tbsp chocolate chips


  1. Add all ingredients to a large mixing bowl and mix until ingredients are evenly distributed. 

  2. Grab a small amount of mixture and with your hands roll into a bite-sized ball, using similar motions as when making meatballs. 

  3. Lay balls on a baking tray and refrigerate or freeze until ingredients set.

  4. Enjoy.
