One cucumber, peeled and roughly chopped (about 1/2 cup)
3 tablespoons hempseed milk (or milk of your choosing)
1 tablespoon honey (optional)
1/2 small lime, juiced (about 1 tablespoon)
2 cups of cubed, seedless watermelon, frozen
Put the cucumber, milk, honey (if using), and lime juice into a blender. Blend on high until smooth.
Add half of the frozen watermelon and blend until almost completely smooth. If needed, turn off the blender and push down on the ingredients with a wooden spoon as needed to help blending process.
Add the remaining frozen watermelon and continue to blend until smooth. Add 1 to 2 tablespoons of water if needed to adjust consistency.
Pour into a glass. For presentation, garnish with a cucumber slice!
