1 bag of Beanitos White Bean Chips Restaurant Style
1 pound grass-fed ground beef
1 can Amy's Organic Vegetarian Traditional Refried Beans (may not use the whole can though) OR make homemade Healthy Vegetarian Refried Beans
6 Stripped of Bacon (Applegate's Natural Sunday Bacon)
6 Slices's of Ham (Applegate's Natural Slow Cooked Ham)
1/2 teaspoon sea salt
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/8 teaspoon cumin
1 onion chopped
1 cup of mushrooms, chopped
1 avocado, chopped
Parsley, for garnishing
Preheat the oven to 350 degrees F
In a small bowl, add the ground beef to a bowl. Using a wooden spoon or clean hands, mix the beef. Then add the sea salt, garlic powder, onion powder, and cumin. Again, using a wooden spoon or clean hands, stir until well combined. Set bowl aside.
Chop the onion and mushrooms, then set aside as well.
Heat up skillet on medium-low flame. Chop the uncooked bacon then add to heated skillet.
Once the bacon is slightly cooked, and there is some grease build up, add in the chop meat. Be sure to continuously stir to break up the meat into small pieces.
Add in the onions and mushrooms when the beef is starting to break apart and cook.
While the beef is cooking, chop up the ham and add to the meat mixture. Stir to combine. Once cooked, turn off flame.
In a baking pan, spray with none cook spray. Add the Beanitos chips, then spread the refried beans over the chips (as much as you like). Top it off with the meat mixture. Bake for 5 to 10 minutes.
Remove from oven and top with chopped Avocado and parsley before serving.
