Pumpkin Chocolate Chip Cookies


  • 2 ¼ cups flour (Oat Flour for Gluten-Free)

  • 1-teaspoon baking soda

  • 2 sticks butter, room temperature

  • ¾ cup sugar

  • ¾ brown sugar

  • 2 eggs -or- 2/4 cups of applesauce or vanilla yogurt

  • 1/3 cup pumpkin puree

  • 1 teaspoon cinnamon

  • 1-tablespoon vanilla extract

  • 2 cups chocolate chips


  1. Preheat the oven to 350 degrees. In one bowl, add flour and baking soda, mix. In another bowl, add butter and mash with a fork until softened. Then add in sugar, mix; add brown sugar, mix. Add eggs and vanilla extract, and mix.

  2. Combine the flour and baking soda into the mixed butter, sugar, brown sugar, egg, pumpkin puree, cinnamon, and vanilla bowl. Mix. When reached thick dough, add in chocolate chips.

  3. Using a spoon, scoop out a spoonful of dough, and place on a pan sprayed with stick-free spray. Line the pan and then cook for 12 minutes. Allow cooling for a few minutes and the transferring to a wire rack.
