  • 3 lbs boneless chicken thighs

  • 3 tablespoons olive oil or room temperature butter

  • 3 cloves of garlic

  • 1 teaspoon basil, dried

  • 1 teaspoon thyme, dried

  • 1 teaspoon rosemary, dried

  • ½ teaspoon salt


  1. Preheat oven to 425º F.

  2. In a bowl, combine the oil/butter and seasonings.

  3. Trim the chicken of any excess fat and place it onto a baking dish. Pat the top of the chicken dry with a paper towel (this will help the herb butter better stick to the chicken). Coat the chicken by smearing the herb mixture on it.

  4. Cover the baking dish with aluminum foil and bake the chicken for 20 to 25 minutes or until fully cooked through. Cooking time will depend on the thickness of the chicken thighs.

  5. Remove chicken from the oven and let rest for 5 minutes before eating.

  6. Pair with your favorite sides!
