Italian Cuisine

Coming from an Irish-Italian heritage household, being allergic to nightshades put a bit of a damper on my family's traditional dishes. Instead, we now use alternative ingredients to fulfill our needs. These recipes use a lot of beet-and-carrot blends to mimic the taste of tomatoes, use zucchini as a replacement for eggplant, and only use gluten-free, corn-free pasta!
