Growing up, Joe's half-Italian heritage meant countless cherished childhood memories revolved around Sunday dinners at Grandma Annie's. Her kitchen was the heart of the home, where his love for cooking first blossomed amidst the aromas of simmering sauces and fresh pasta. However, after my nightshade allergy entered the picture, it put a real damper on enjoying those beloved family dishes.
Determined to recreate the Italian classics we both loved, Joe took on the challenge. He's since mastered using beet-and-carrot blends to perfectly mimic the taste of tomatoes, swapped eggplant for versatile zucchini, and exclusively uses gluten-free, corn-free pasta. Now, thanks to his dedication, we can both savor all our Italian favorites, reimagined to be delicious and safe for everyone!
