Red, White, and Blue Layered Cake with an American Flag Surprise

Ingredients

For cake:

  • 4 1/2 cups all-purpose flour, or all-purpose gluten-free flour

  • 1 1/2 tablespoons baking soda

  • 3/4 teaspoon salt

  • 2 1/4 cups sugar

  • 3/4 cup butter, softened

  • 9 large Eggs (whites only)

  • 1 teaspoon vanilla

  • 1 1/2 cups milk

  • 1/2 teaspoon red gel food color

  • 1/4 teaspoon blue gel food color

For frosting:

  • 2 (8-ounce) packages cream cheese, softened

  • 1/2 cup unsalted butter, softened

  • 8 cups powdered sugar

  • 1 tablespoon vanilla

  • 1 to 2 tablespoons milk

Directions

  1. CAKE: Heat oven to 350°F. Grease and flour three 9-inch round cake pans; set aside.

  2. Combine flour, baking soda, and salt in a bowl. Set aside.

  3. In a stand mixer or separate bowl, add sugar and butter and beat at a medium speed. Scape the bowl occasionally and continue this until everything is combined and creamy.

  4. Add 1 egg white at a time, beating well after each addition. Add vanilla; mix well.

  5. Add flour mixture alternately with 1 1/2 cups milk, beating at low speed after each addition just until mixed.

  6. Divide batter in half; tint one-half red. Then, divide the remaining batter in half; tint one half blue and leave other white.

  7. Pour each batter into individually prepared pans.

  8. Bake white and blue layers 18-20 minutes or until a toothpick inserted in center comes out clean.

  9. Bake red layer 30-35 minutes or until a toothpick inserted in center comes out clean.

  10. Let the bakes sit for about 10 minutes post-oven to cool. Loosen edge of cakes by running a knife around inside edge. Carefully remove cakes from pans to cooling rack; allow to cool completely before decorating.

  11. FROSTING: Cream together the butter and cream cheese.

  12. Add in the powdered sugar, vanilla, and milk; combine until fluffy
