Pineapple Rice


  • 1 cup water

  • 1 cup pineapple juice

  • 1 cup crushed pineapple

  • 1 Tbsp. unsalted butter

  • ½ tsp. sea salt

  • 2 cup rice, cooked

  • juice ½ lime (optional)

  • chopped fresh cilantro


  1. Bring water, pineapple juice, pineapples, butter, and salt to a boil in a small saucepan or wok.

  2. Once the liquid comes to a boil, add in rice. Allow to cook for 15 minutes, occasionally stirring.

  3. Remove pan from heat, let sit 5 minutes, then fluff rice with a fork. Stir in lime juice and chopped cilantro.
