¾ cup oat flour
1 cup rolled oats
1 teaspoon baking soda
1 teaspoon sea salt
¼ cup date sugar
1 teaspoon cinnamon
⅓ cup honey
½ cup Sunbutter
¾ cups chia seeds, soaked in water
(Optional) ⅓ cup Enjoy Life Chocolate Chips
2 dried dates, diced
1/2 cups blueberries, or berries of choice
Preheat oven to 375° F.
In a bowl, combine the dry ingredients: oat flour, all purpose flour, rolled oats, baking soda, sea salt, date sugar, and cinnamon. Mix with a whisk and set aside.
In a mixer, combine honey, Sunbutter, and chia seeds. Add in eggs and mix again.
While mixing, slowly add in the dry ingredients and stir until combined. After, add in the chocolate chips, dates, and berries.
Fill muffin pan and cook for 15 to 20 minutes.
Remove and let cool on wire rack.
