Gluten-Free Noodle Stir Fry with Pumpfu

This cozy, allergy-friendly gluten-free noodle stir-fry with Pumpfu swaps traditional chicken and soy-based tofu for pumpkin seed-based 'Pumpfu,' making it a comforting, quick meal.

When Joe travels for business, the house gets a little quiet—and my usual meal-planning routine gets a little thrown off. One evening recently, after a long day, I found myself craving takeout. You know the feeling: the comfort of a big, steaming box of savory, salty noodles without having to lift a finger in the kitchen.
But with my food allergies, takeout is rarely that simple. So I did what I do best: I decided to make my own version.

I turned on an audiobook to fill the silent house with noise, grabbed a cutting board, and set to work. I wanted something hearty and satisfying, but I was faced with a challenge—no chicken on hand, and as most of you know, regular soy-based tofu is off the table for me.
That’s when I reached for Pumpfu.
If you haven’t discovered it yet, it’s been a total game-changer in my kitchen. It has that satisfying, dense texture of tofu, but it’s crafted entirely from pumpkin seeds. It soaks up savory sauces beautifully and provides that perfect protein punch I was looking for.
I played around with flavors until I hit the perfect balance: a silky, savory, allergy-friendly stir-fry that felt just as comforting as any takeout I’ve ever ordered. It turns out, sometimes the best nights are the ones you spend in your own kitchen, turning a "what do I have in the pantry" moment into a new favorite recipe.

Directions
Start by bringing a large pot of water to a boil. Add the gluten-free noodles and cook them until they are al dente—this is crucial, as the noodles will finish cooking in the sauce later. Once done, drain and rinse them with cold water to stop the cooking process and prevent sticking. Set them aside while you prepare the rest of the dish.
While your noodles cook, cube the Pumpfu and toss the pieces in tapioca flour/arrowroot starch. This step is essential to achieving that crispy exterior on the Pumpfu.
Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the coated Pumpfu cubes and cook them until they’re browned and crispy on all sides, turning occasionally to ensure even cooking.
While the Pumpfu is cooking, it’s time to prepare the sauce. In a small bowl, mix together the soy-free soy sauce, sesame oil, maple syrup, rice vinegar, sesame seeds, minced garlic, garlic powder, and ginger powder. Stir well to combine all the flavors.
Once the Pumpfu is crispy, pour half of the sauce over the Pumpfu in the skillet. Toss the Pumpfu until it absorbs all the sauce and starts to caramelize. The sauce will reduce slightly, coating the Pumpfu with a sticky, flavorful glaze. Transfer the Pumpfu to a bowl and set it aside, leaving the skillet for the veggies.
In the same skillet, heat the remaining tablespoon of olive oil. Add the shredded carrot and diced onion to the pan. Cook the vegetables over medium-high heat for about 5 minutes, tossing occasionally until they are slightly charred and tender.
Once the veggies are cooked, add the cooked noodles and the remaining stir-fry sauce to the skillet. Toss everything together, ensuring that the noodles are evenly coated with the sauce. Continue cooking for a few more minutes, letting the noodles soak up the flavor and finish cooking in the sauce.
Finally, return the crispy Pumpfu to the skillet and toss it with the noodles and vegetables. Allow everything to heat through, ensuring the Pumpfu absorbs some of the remaining sauce. The dish is now ready to serve!
Transfer the stir-fry to plates and garnish with chopped green onions and a sprinkle of sesame seeds for added texture and a fresh finish.
