Sticky Pineapple Rice | Quick and Easy Recipe - amanda macgregor centineo - food allergy recipes

Tropical, sweet, and absolutely delicious. That’s what this pineapple rice is all about! Try pairing it with our Honey Garlic Salmon, Honey Glazed Chicken, or Laura's Lentil Chickpea Burger for a tasty summer meal!


Ingredients

  • 1 cup water

  • 1 cup pineapple juice

  • 1 cup crushed pineapple

  • 1 tablespoon unsalted butter or palm shortening

  • ½ teaspoon sea salt

  • 2 cups rice, cooked (leftover plain rice works best!)

  • juice of half a lime

  • chopped fresh cilantro

Directions

  1. Add all ingredients up to sea salt in a saucepan or wok. Let cook over a medium flame until the liquid begins to boil.

  2. Add in the rice and allow to cook for another 15 minutes while stirring occasionally.

  3. Remove pan from heat and let sit 5 minutes. Then fluff rice with a fork.

  4. Drizzle with lime juice and top with chopped cilantro before serving.
