My love affair with waffle makers began during childhood family vacations. The hotel breakfast buffet always featured a waffle-making station, a tantalizing treat I could only admire from afar due to dietary restrictions. Watching my dad and sister indulge in those warm, fluffy waffles sparked a lifelong fascination.


Years later, my dad surprised us with a waffle maker of our own. To celebrate, he declared Saturdays as 'Waffle Ice Cream Sundae Night.' We'd gather in the kitchen, at midnight staying up late to savor waffles topped with (you guessed it) dairy-free ice cream. It was a short-lived tradition, but one that I cherish.


So, when Joe and I started planning our wedding, a waffle maker was at the top of our registry. Now, we create our own waffle memories with this batter recipe that's safe for me to enjoy. While we typically limit waffles to breakfast or dinner, a midnight waffle party might just be in our future.


Bonus: This versatile batter can also be used to make pancakes!




Perfect Pancakes and Wonderful Waffles

 

Ingredients

Dry Ingredients:

Wet Ingredients:

  • 1 ripe banana or 1 egg

  • 1 tablespoon oil of your choice

  • 1 ½ cup water or dairy-free milk of choice

  • 1 teaspoon vanilla

  • 1 tablespoon maple syrup

Directions

  1. In a large bowl, whisk together all dry ingredients.

  2. In a separate bowl, combine all wet ingredients.

  3. Measure 2 cups of the dry ingredients and combine them with the wet ingredients. Any leftover dry ingredients can be stored in an airtight container and used for the next time.

  4. Stir in any desired mix-ins (chocolate chips, berries, nuts, etc.).

  5. Preheat your waffle iron or skillet. Lightly grease with cooking spray or oil.

  6. Pour batter onto the preheated surface.

    1. For waffles: Follow the manufacturer's instructions.

    2. For pancakes: Cook for 2-3 minutes per side, or until golden brown and bubbles form on the surface.
