1 cup old-fashioned oats, raw
2/3 cup finely grounded oats
1/4 cup ground flax seed
1/3 cup honey
6 tablespoon Enjoy Life's mini chocolate chips
1 teaspoon vanilla extract, optional
Add all the ingredients to a large mixing bowl and mix until everything is combined and evenly distributed.
Place parchment paper on a baking sheet.
Grab a small amount of the mixture, about 1 tablespoon, and, with your hands, roll it into a golf-sized ball, using similar motions as when making meatballs.
Lay the balls on the baking sheet and freeze for an hour to overnight.
Keep in a Ziploc bag and store in the fridge for up to 1 week, or in the freezer for up to 1 month.
