This is such a great mid-day snack. We make them in bulk and store them in the freezer. Whenever we are having a busy work day that is leaving us feeling sluggish, are feeling snacky, or want something sweet after dinner, we pull 2 or 3 (or 4) bites out and enjoy. They are super easy to make too! We typically use all-natural peanut butter sweetened with honey, but it also works well with Sunbutter or almond butter.



Oats & Chocolate Energy Bites with Nut Butter

 

Ingredients


Directions

  1. Add all the ingredients to a large mixing bowl and mix until everything is combined and evenly distributed.

  2. Place parchment paper on a baking sheet.

  3. Grab a small amount of the mixture, about 1 tablespoon, and, with your hands, roll it into a golf-sized ball, using similar motions as when making meatballs.

  4. Lay the balls on the baking sheet and freeze for at least an hour or overnight.

  5. Keep in a Ziploc bag and store in the fridge for up to 1 week, or in the freezer for up to 1 month.
