By blending Medjool dates with creamy nut butter, you get a decadent, "caramel-like" texture that feels like a treat but fuels like a meal. We’ve added a touch of natural sweetness and dark chocolate chips to crush those afternoon sugar cravings, while the chia seeds pack a punch of Omega-3s, fiber, and protein.

Nut Butter Chia Seed Energy Bites
Ingredients:
10 Medjool dates, pitted
¾ cup peanut butter (or almond butter, cashew butter, or sunflower seed butter)
¾ cup rolled oats
2 tablespoons maple syrup or honey
2 tablespoons chia seeds
½ cup dark chocolate chips

Directions:
Place the pitted dates in a food processor or high-powered blender. Pulse until they form a thick, sticky paste or a ball.
Add the nut butter, oats, maple syrup, and chia seeds to the processor.
Pulse the mixture a few times until just combined. Avoid over-blending at this stage; if the mixture is processed too long, the oils from the nut butter may separate, making the dough greasy.
Add the chocolate chips and pulse 2–3 times to distribute them, or stir them in by hand if you prefer whole chips.
Scoop about one tablespoon of dough at a time and roll between your palms into balls.
If the mixture is too soft to roll, chill it in the fridge for 15 minutes first.
Place the bites in an airtight container. They will stay fresh in the fridge for up to 10 days or in the freezer for up to 3 months.
