Who says missing out on classic treats is necessary? These Peanut Butter Blossom Cookies are dairy-free. We’ve also included options for peanut-free alternatives, so everyone can enjoy this sweet treat!

There are fond memories of unwrapping Hershey's Kisses from their foil covering, and placing them in a pile while my mom created the cookie dough we would later press these reserved chocolates into. I remember the classic flavor of this chewy and tender peanut butter cookie, topped with a dark chocolate Hershey Kiss.


Growing up, Hershey's dark chocolates used to be dairy-free, but we can't say the same thing anymore these days. Living with food allergies should still be sweet though. That is why I created these peanut butter blossom cookies that use Enjoy Life chocolates, making the recipe dairy-free, and gluten-free, and include nut-free alternatives.

Directions:

  1. Preheat your oven to 350°F and line baking sheets with parchment paper.

  2. Cream together the palm shortening, peanut butter, sugar, and light brown sugar in a large bowl until light and fluffy. Beat the vanilla and egg.

  3. Combine the two flours, baking powder, and sea salt in a separate bowl. Gradually add to the wet ingredients and mix until just combined.

  4. Scoop out rounded tablespoons of dough and roll into balls. Coat the balls in granulated sugar.

  5. Place the cookie dough balls on the prepared baking sheets, leaving about 2 inches between each cookie. Press into the centers of the dough balls with a ½ teaspoon measuring spoon. Add the Enjoy Life chocolate chips to the center.

  6. Bake for 8-10 minutes, or until the edges are golden brown.

  7. Let cool on the baking sheets for a few minutes before transferring to a wire rack to cool completely.
