A little backstory about me was I had a weird obsession with waffle makers. It could have been rooted back to our beloved family vacations we took while growing up, the ones where the hotels would have a "make your own waffle" station for their complimentary breakfast. Granted, I couldn't use it due to cross-contamination, but would happily watch my sister and dad make their waffles.


This led to years later, my dad purchasing a waffle maker for the house. In celebration, my dad declared midnights on Saturday to be waffle ice cream sundae time. We would force ourselves to stay up late and then gather in the kitchen to pig out on dairy-free waffles topped with ice cream (dairy-free ice cream, of course). This was short-lived but was such a fond memory.


This is probably why one of the first things Joe and I added to our wedding registry was a waffle maker. Now we make our own tasty memories with one of our very own and use this batter recipe that is safe for me to eat! Granted, we now only have waffles for breakfast or dinner, but for old-time sakes, may have to plan a midnight waffle party soon.


The best thing about this batter is you can also use it to make pancakes!


Perfect Pancakes and Wonderful Waffles

Our Food Allergy-Friendly Pancake and Waffle Batter Recipe
 

Ingredients

Dry Ingredients:

Wet Ingredients:

  • 1 ripe banana or 1 Vital Farm egg

  • 1 tablespoon oil

  • 1 ½ cup water or dairy-free milk of choice

  • 1 teaspoon vanilla

  • 1 tablespoon maple syrup

Directions

  1. Add all the dry ingredients to a mixing bowl and combine them with a whisk.

  2. In another bowl, combine all of the wet ingredients.

  3. Measure 2 cups of the dry ingredients and combine them with the wet ingredients. Any leftover dry ingredients can be stored in an airtight container and used for the next time.

  4. Once the ingredients are evenly combined and form a batter, go ahead and add in any of your desired additions.

  5. Heat your waffle maker or pancake pan. Spray with cooking spray or oil before adding the batter.

    1. If making waffles, cook according to the waffle maker's instructions.

    2. If making pancakes, let the batter cook for about 3 minutes on the pan before flipping. Cook the other slide until the center is fully set and you reach your desired cook on the outside.
