Pumpkin Banana Chip Muffins


  • 1 Cup Pumpkin, canned

  • 1 Egg, large (or an egg substitute)

  • 2 tablespoons Honey

  • 1 banana, sliced

  • 1/2 teaspoon Baking Soda

  • 1 teaspoon Cinnamon

  • 1 1/6 cup Rice Flour

  • 1/4 teaspoon Sea Salt

  • 1/3 cup Chocolate Chips (Enjoy Life dairy, nut, and soy free chocolate chips)


  1. Preheat the oven to 350 degrees F.

  2. In a bowl, combine the pumpkin, honey, egg, and banana. Beat until combined.

  3. Add the salt, baking soda, cinnamon, and rice flour into the bowl. Combine.

  4. Stir in the chocolate chips

  5. Sperate the mixture evenly in the muffin pans. (Add a few extra chocolate chips on top if desired.)

  6. Bake for 18-22 minutes.

  7. Remove from pan and allow to cool before eating.
