The Sunday Cookbook: Homemade Oven Baked Chicken Nuggets

1 pound ground chicken
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/4 teaspoon sea salt
2 eggs, scrambled
Breadcrumbs - we made our own homemade breadcrumbs by toasting Happy Campers GF bread and adding it to a food processor until crumbled.
Preheat oven to 375° F. Line a baking sheet with parchment paper and set aside.
In a bowl, combine ground chicken and seasoning. While we went very simple with our seasoning, feel free to add whatever seasonings you please!
In a second bowl, add eggs and whisk until scrambled. In a third bowl, add your breadcrumbs.
To assemble, begin by making a golf ball-sized ball of the ground chicken. Dunk it in egg, and roll it into the breadcrumb before transferring to the parchment-lined baking sheet. Repeat this process until you are out of chicken.
On the pan, press down with your fingers on each ball of chicken to form a "nugget" shape.
Bake for 20 minutes, flipping them halfway through cook time. Chicken should reach an internal temperature of 165° F.
Serve with your favorite fries and dipping sauce; Enjoy!
