The Sunday Cookbook -  Homemade Oven Baked Chicken Nuggets - joseph centineo - amanda macgregor - food allergy recipes


  • 1/2 teaspoon garlic powder

  • 1/2 teaspoon onion powder

  • 1/4 teaspoon sea salt

  • Breadcrumbs - we made our own homemade breadcrumbs by toasting Happy Campers GF bread and adding it to a food processor until crumbled.


  1. Preheat the oven to 375° F. Line a baking sheet with parchment paper and set aside.

  2. In a bowl, combine ground chicken and seasonings. While we went very simple with our seasoning, feel free to add whatever seasonings you please!

  3. In a second bowl, add eggs and whisk until scrambled. In a third bowl, add your breadcrumbs.

  4. To assemble, begin by making a golf ball-sized ball of the ground chicken. Dunk it in egg, and roll it into the breadcrumb before transferring it to the parchment-lined baking sheet. Repeat this process until you are out of chicken.

  5. On the pan, press down with your fingers on each ball of chicken to form a "nugget" shape.

  6. Bake for 20 minutes, flipping them halfway through cook time. The chicken should reach an internal temperature of 165° F.

  7. Serve with your favorite fries and dipping sauce!
